Instead of buying his usual chickpea bars, I decided to surprise him with a homemade, healthy, and decadent birthday treat—my Chickpea, Peanut Butter, Coconut Chocolate Bars! 🍫🥜🥥

Chicpea Peanut Butter Bars with Dark Chocolate Chips & Coconut
2 tablespoons coconut oil
1-1/2 cups whole oats
1 cup all natural peanut butter*
1/2 cup honey*
2 teaspoons vanilla extract
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 package (10 ounces) dark chocolate chips
1 cup unsweetened coconut*
Pretty oven to 350°F.
Line 9X 13 -inch baking pan with aluminum foil overlapping size in line with parchment paper. Freshman spell coconut oil on bottom and sides of pan.
Food processor process oats until fine. Add chickpeas, peanut butter, honey, vanilla extract, cinnamon, baking soda and baking powder. Process by pulsing, one minute or until blended.
Star in chocolate chips. Spoon into prepared pan and bake 18 to 20 minutes or until firm; That cool. Refrigerate at least two hours. Cut into bars.
TIPS: substitute peanut butter with almond butter.
* substitute with maple syrup.
* substitute for sweetened coconut.
Makes about 20 servings.
