💡 Pro Tips for the Best Scones:


✔️ Cold ingredients = flakier scones! Keep your butter and buttermilk chilled before mixing.

✔️ Don’t overmix! Stir until just combined—overworking the dough makes them dense.✔️ Use a sharp cutter! I love a bench scraper with a handle—it cuts them perfectly.

✔️ Bake at a high temp! A hot oven (around 400°F) gives them a golden, crispy edge.✔️ Make ahead & freeze! Flash freeze unbaked scones, then bake straight from frozen when needed.


✔️ What You Need:

  • 2 cups all-purpose flour

  • ½ cup sugar, plus 2 tablespoons

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 8 tablespoons (1 stick) unsalted butter, well chilled and divided

  • 1 cup raisins or currants

  • 1 egg, beaten

  • ½ cup buttermilk, plus 2 tablespoons


✔️ How to Make It!


1️⃣ In a large bowl, combine flour, ½ cup sugar, baking powder, baking soda, and salt.2️⃣ Cut 6 tablespoons of butter into small cubes. Add them to the flour mixture and use your fingers to quickly smash the butter until the mixture resembles small peas.3️⃣ Add the egg and ½ cup buttermilk, stirring until the mixture just starts to come together.4️⃣ Flour a parchment-lined baking sheet, then turn the dough onto it. Gently press and shape it into a circle about 1 to 1½ inches thick (be careful not to soften the butter too much!).5️⃣ Use a bench scraper or sharp knife to score the dough into 8 triangles. Slice the remaining 2 tablespoons of butter and place in between the cuts.6️⃣ Brush with the remaining 2 tablespoons of buttermilk and sprinkle with the remaining 2 tablespoons of sugar. Freeze for 10 minutes.


💡 Pro Tip: Want to make these ahead? Freeze the dough at this stage and bake whenever you're ready!


7️⃣ Preheat oven to 400ºF.8️⃣ Bake for 18 to 20 minutes or until golden. Use a scraper or sharp knife to cut through the scored lines.9️⃣ Serve warm with Irish butter and enjoy!
