TRICK OR TREATS season Part TWO

When I was a little my mom was my Girl Scout troop leader and for our troop snack she made rice crispy bars. I have loved them ever since. I actually became my oldest daughter’s Girl Scout troop leader and continued the tradition. In my Holiday cookbook's HALLOWEEN section, I feature my “BUGFUL CRISPY TREATS”...I promise they will be a hit with my gummy worm ghoulish garnish. I make these marshmallow treats extra thick and gooey with gummy worms for a dreadful treat.

Bug-ful Rice Crispy Treats

Line 9 x13-inch baking pan with aluminum foil. Spray with non-stick cooking spray. Line bottom with parchment paper and spray again.

1 bag (12 ounces) marshmallows

3 tablespoons butter

Combine in 1-quart heatproof measuring cup or casserole dish. Heat in microwave, 1 minute and 30 seconds. Stir and heat additional 30 seconds or until melted.

8 cups crispy rice cereal

Combine in large bowl with melted marshmallow mixture. Stir quickly with wet spatula.

Put into prepared pan with wet hands quickly.

Smooth top with bottom of metal measuring cup dipped in water.

Let cool and cut into squares.

Assorted sprinkles

Gummy worms, assorted gummy treats and googly eyes

Decorate as desired.

Makes 24 squares

TIP: Can be made, wrapped with plastic wrap and stored in refrigerator three days ahead.

TIP: I usually make 3 batches and use a 12½ x 17½-inch half sheet pan for a big crowd.
